Bloody Mary Minneapolis Jucy Lucy - Minneapolis Style

Ingredients

  • 10 fluid ounces Low Sodium V8® (about 1 1/4 cups), chilled
  • 2 fluid ounces vodka (about 1/4 cup)
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon sweet pickle relish
  • 3 teaspoons ketchup
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon hot pepper sauce
  • 1/4 teaspoon celery salt
  • 5 ounces ground beef
  • 2 mozzarella & cheddar cheese twist string cheese sticks
  • 1 egg, beaten
  • 1 cup dry pancake mix
  • 8 fluid ounces pale ale-style beer (about 1 cup), chilled
  • 1 teaspoon kosher salt
  • 2 cups vegetable oil

How to make it

Servings: 2

  1. Stir the vegetable juice, vodka, Worcestershire, relish, 1 teaspoon ketchup, vinegar, hot sauce and celery salt in a pitcher. Cover and refrigerate.
  2. Mix the beef and remaining ketchup in a medium bowl. Divide the beef mixture in half. Shape each half into a rectangle and place 1 string cheese in the middle of each. Press the beef mixture around the cheese to enclose.
  3. Place 1/4 cup pancake mix onto a plate. Coat the cheeseburger sticks with the pancake mix. Beat the remaining pancake mix, egg, 1/2 cup beer and the salt in a medium bowl with a whisk. Dip the cheeseburger sticks into the batter to coat.
  4. Heat the oil in a 4-quart saucepan over medium heat. Add the cheeseburger sticks and cook for 2 minutes on each side or until cooked through and dark golden brown. Drain the cheeseburger sticks on paper towels. Skewer each with a wooden skewer.
  5. Fill 2 glasses with ice. Stir the remaining beer into the vegetable juice mixture. Season to taste. Pour the vegetable juice mixture into the glasses. Garnish with the skewered cheeseburger sticks.
  6. Serving Suggestion: Add burger toppings and/or sides to the skewers with the cheeseburger sticks, like potato nuggets or waffle fries, bread and butter pickle slices, cocktail onions and/or grape tomatoes.
  7. For Buffalo-Style Jucy Lucys, substitute Buffalo-style sauce for the ketchup in the beef mixture. Omit the string cheese and shape the beef mixture around a filling of crumbled blue cheese and bacon.
